I just picked up Marc Vetri's Mastering Bread.

 

His sourdough recipe calls for "bolted hard wheat flour". Can someone suggest a source that I can find this?

EDIT: Are you in the UK? Your last post said you used Doves Flour! If so, then this would be a bolted/high extraction flour available in the UK (there will be more but here's one example)...

In Canada, I've seen it sold in health food stores as sifted hard wheat flour, for example

In the US, it is more likely to be sold as high extraction flour, for example
