KAF has a GF shortbread cookie recipe available on their website. It uses almond flour, and is easy and wonderful - light, crisp, delicate flavor. Also, meringue can be made into cookies.

My best friend is GF so i have been trying different GF chocolate chip cookie recipes! Here is my favorite one so far... the original recipe is found here thanks to the creator of "My Gluten Free Kitchen" Michelle.
I only slightly tweaked the recipe but it turned out great! :) i'm baking this recipe again tonight and will include a picture once these cookies are outta the oven!

For the most part I have no problems using any recipe and converting to gluten free vegan (my restrictions) unless it has more than 3 eggs in it those dont really convert to vegan. But when im feeling nostalgic this is my favorite http://www.geniuskitchen.com/recipe/gluten-free-oreo-cookies-186848. I use coconut oil in place of butter and my own random flour blend depending on whats on hand but ive never had it fail on me.
My experience baking for family members with confirmed celiac is that you get the best results with baked goods that didn't rely on gluten for structure in the first place. This includes shortbreads, bar cookies, flourless chocolate cakes, fruit and nut clusters, macaroons, etc. (There has been a lot of progress made with GF work-arounds, and of course it's worth trying anything to replicate a much-missed favorite, but the replicas always have a different texture.)
I use a basic shortbread recipe which can be made with any flour, without resorting to xanthum gum, etc. It is delicious in these combinations: rice flour with matcha (green tea powder); chestnut flour with rosemary or with apple pie spices; chickpea flour [aka gram flour or besam] with Indian spices; cornmeal (I like a combo of fine and coarse) with jalapeno. Or anything you like, really.
America's Test Kitchen GF cookbook has been highly recommended, but I haven't cooked from it.

I have 2 recipes that are my go-to for GF cookies. For sugar cookies, I love this recipe. A lot of people don't even realize that they are gluten free. Another fave of mine is this GF chocoloate chip chickpea recipe. Sounds weird but it is sooo good! Great allergy-friendly spin-off of the classic chocolate chip cookie. Hope you find some recipes you like!
