Hi, any advice or tips very much appreciated as I am struggling at the moment and really want to make this work. I have a very small cafe on the outskirts of town a real hidden gem or so I would like to think. I have been open about five years and it is all about the produce and making the best possible food that we can. We have been buying bread but we couldn't seem to find the quality we wanted so we started making our own which is going down a storm. But we only have a normal kitchen oven and the kitchen is very small. I have managed to secure funding to renovate and install a proper kitchen with bread ovens out the back. But I have been baking bread at home for over ten years I do lack the experience of running a bakery although it will be small to start with we really want to push this as there is nothing in the town that matches our bread. Does anybody have any tips or advice for what we want to do any advice really welcome as I am a bit of a novice when it comes to commercial baking. Also can anyone recommend a cheap is oven to get started and build as we go as some ovens are so expensive they would just wipe out all my funding in one go.
