Dough bins??



I am looking for recommendations on large food grade bins I could use for letting my bread dough rise. I am making 50 pound batches at a time.

At the bakery where i worked we used tubs similar to what bus boys use, but they had lids and were semi transparent. If you go to any restaurant supply you can find something suitable. Some bakeries use clear round 5 gallon buckets with graduated markings. Basically the item you're looking for holds about 15-20 lbs of dough and costs $10-15. You just divide the dough to fit the container, and also for ease of lifting.

...but my batch size is only 9 kg (a dozen loaves in my WFO). I do three or four hand-mixed batches on bake day.
