Newbie's first loaf question

Hey everyone! I made my first loaf of bread this past weekend and did it according to the first lesson on this site (simply flour, yeast, salt, water). It came out wonderfully, and I'm so proud of it! My only question is, it seems to leave a sour taste in my mouth after I eat it. Is this common with homemade bread, or is it something in the recipe? Or was it my own doing (very likely the case!).

The range of flavors

The range of flavors available in yeast breads is fairly broad.  Some can be sweet, some savory and others sour.  As long as you used all the ingredients listed, in the amounts listed and all ingredients were fresh, I wouldn't be concerned about it. You might want to try making another loaf and add a tablespoon of sugar to learn how that changes your flavors.


when you're ready

you may like to try an overnight cold retardation.  Thats bread talk for bunging the dough in the fridge over night.  Take it out the next day, let it slowly warm to room temp then continue with your rising/ proofing as normal.

 

You will be pleasantly rewarded with more lovely flavour than you get with fast same day bread.

Thanks everyone for the great input. I actually did put it in the fridge after I realized at 2 AM that I was not going to be able to stay awake for the rising. I was blaming that, but I guess it's fine. :) Thanks again!
